This is How I Cook: Peanut Butter Chocolate Chip Cookies

I was craving cookies.
I was craving cookies BAD.
It was mandatory for me to get cookies in my belly RIGHT NOW.


So...what would a crafty girl do?!?
Go on Pinterest and find a cookie recipe that "speaks" to her.

And that I did.



WHAT YOU NEED:

2 cups all-purpose flour
1/2 teaspoons baking soda
8 tablespoons of salted butter, melted and cooled
6 tablespoons of creamy peanut butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 1/2 cups chocolate chips

Preheat oven to 325 degrees F.
Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted.
Let cool completely.


Mix the flour and baking soda in a bowl and set aside.


In another bowl, mix the cooled butter/peanut butter and sugars until they are combined.
Add the egg, egg yolk, and vanilla and stir until mixed.


Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together.
**If necessary, add 1-2 teaspoons of milk, but I did not need this.
Fold in chocolate chips.



Shape the dough into a ball the size of a golf ball.
Place on a baking sheet two inches apart and bake for 10 minutes or until the edges are slightly brown.


The centers should be soft and puffy.
Do not over bake.


So yummy!!!
They were a hit at my friend Ang's housewarming party too!

PL Peek ~ My Great Grandma

I think it is absolutely amazeballs that i still have a Great Grandma.
When i was young my mom would send me over to Vancouver to spend some of my summer holidays with her every year.
I remember waking up to the smell of East Indian food cooking, the kettle squeeling a high pitched whistle and Grandma singing the Sikh bible.
She made me homemade fries and boiled hotdogs for lunch or we would walk down to KFC for chicken which is her favorite.

I remember loads of visitors would come through the house on a daily basis for visits, but at 1 o'clock sharp - it was time to watch Days of Our Lives on tv.
When we would go to Vancouver for church i was always put on cutting veggies with all the other "white ladies". All i ever wanted was to stir one of the HUGE pots of curry the old ladies were making.
She passed on tonnes of indian jewellery, sari's and dishes to me.
She is now in a care home and is getting older by the minute. I think this visit will be my last one. I want to remember her by these stories for the rest of my life.
I love you Grandma Johl. Thanks for always keeping me interested and respectful of our culture. :)

Miss Travel McTravelson ~ London, England


Many moons ago, while working for the oil & gas company, I got the privledge to go to London for our staff Christmas Party!
Crazy - I KNOW!!!


The best part about it was I got to see one of my closest and dearest friends Tracy while I was there.
Trace and I travelled in Australia years ago.
Like...10 years ago (WOW).


We had an amazing night out...a great visit really.
I can't wait till the next time I see her.


It was christmas time so the lights and shopping were to die for.
I spent so much time walking around, going to markets and boot shopping! LOL



The air was chilly and crisp...but so refreshing.
I know thats weird to say LOL


I loved it...I want to go back so bad!
So many places - so little time :)

Outfit Post ~ Sailor! Sailor!


I bought this super cute sailor inspired shirt while I was in Victoria!

I was super excited that it was only $15 and I love love love the gold buttons on the shoulders.





This shirt makes me want an anchor tattoo sooooooo bad.
But really?!? How does that pertain to me and my life at all. LOL


Damn, I was having a good hair day! ;)

PL Peek ~ Petting Zoo!


As i had promised before gong to Victoria, i took Logan to the petting zoo at Beacon Hill Park while I was there.
We were lucky to just miss the rain!!!
They had brand new baby piglets that were just born :)
So cute!!!

Logan loved the peacocks the most! Lol he would skwak at them!


He liked the goats once i got him in there, but he really didnt want to at the beggining. Lol i think he was scared!
After we went to Haultain Fish and Chips and had some lunch! So tasty!
Great day with my lil Logan! Love that kid! Miss him already.

PL Peek ~ Happy Boat Day

I mentioned in this post that i went boating a bit ago!
I was extremely nervous i would get sea sick, so i bought Gravol and those wrist bans!!!
But i didnt get sick at all!!! I had a blast!!!
We docked in the bay at Grenadier Island and drank all day. ;)
Once we got hungry we ventured over to the Gananoque Ribfest!
Soooooi...yummy. Ribs, pulled pork and a banana chocolate beavertail to top it all off!
That night we went to the fireworks and watched them on the river from the boat in Brockville!
This is by far the best Canada Day I've ever had :)
