This Is How I Cook ~ Vegetarian Stuffed Portabello Mushrooms

I loooooovvvvveeee stuffed mushrooms.
Especially this recipe which is my Mom's :)
 
First wash and dry your portabello mushrooms, removing the stems whole (save them for later) and place on a greased cookie sheet.
 
 
Bake at 350 until there is water in the center.
 
 
Melt a tablespoon of butter in a frying pan.
Mince up a half a medium onion, 2 garlic cloves and the mushroom stems you took out.
 
 
Cook on medium until tender.
Add one cup Italian bread crumbs, 1 tsp. oregano, 1 tsp. onion powder, 1 tsp garlic powder and salt and pepper.
Mix well.


Dump the water out of your mushroom caps and stuff with bread crumb mixture.
Press it in firmly.
 
Sprinkle with grated cheese and bake at 350F for another 20 - 30 minutes or until golden brown.
