This Is How I Cook: Quinoa Bites

I found this recipe here on pinterest but it comes from the blog So Very Blessed.
I put this appy out for my Margarita Party cause Friend Number One can't have gluten!
(So annoying - but love her so much I make new things LOL)

I personally hated them, found them really dry and hard to eat...
but all my guests loved them. Raved about them actually.
I tried making them again and I added and changed it a bit to make them more tasty. LOL
Now...these are good eats!!!

YOU NEED:
  • 2 cups cooked quinoa
  • 2 large eggs
  • 1 cup shredded carrot
  • 2 stalks green onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cheddar cheese
  • 2 Tbs all-purpose flour
  • 1/2 tsp seasoning salt
  • 1/4 tsp freshly ground pepper
  • 1 tsp onion powder
  • dash of hot dried chilli's

1. Make your quinoa in a large pot as per package instructions.
2. Preheat oven to 350 degrees.
3. Once your quinoa is fully cooked, mix together quinoa, carrot, egg, green onion, garlic, cilantro, parmasen, chedar cheese, flour, onion powder, chilli's, salt and pepper.
3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each).

4. Bake for 15-20 minutes.
Enjoy!
Cheers,
Messy

  1. As a vegetarian I eat quinoa all the time ... and I've never seen anything like this. Looks delish!

Out of curiosity... what did you do to tweak them?

(& did you have it w. a dipping sauce?)

    xo.

  2. Thanks :)
I added the cheddar cheese, chili's and onion powder. I needed them to have more of a zing!!!
I mixed miracle whip, milk and a little ranch dressing to make a dip but you could use anything!
    Cheers,

  3. Those look so good! I love quinoa and am always looking for different ways to prepare it so it's not the same ol side dish!
